While visiting Josh's aunt recently, she made a unique dish that I will never forget. Mexican Lasagne Bake.
First, she cooked a chuck roast all day long in adobo peppers.
Second, she mixed the the roast and cooked other ingredients on top of some large tortillas in a cast iron skillet.
Third, she served with Greek yogurt, salsa, and fresh avocados.
